Julie Wintersteiner is an assistant professor of Culinary Science, Health, and Nutrition at CIA in New York. A Registered Dietitian Nutritionist, her expertise spans clinical nutrition, nutrition research, and biological sciences. Among the classes she teaches are Nutrition, Food Safety, and Science Fundamentals at the undergraduate level and Nutrition and Optimal Diets I: Theory, a graduate-level course.

Wintersteiner earned her master’s degree in Nutrition from Cornell University and her bachelor’s degree in Biology from the University of Michigan, where she also served as a research assistant in the Department of Ecology and Evolutionary Biology. Her professional development also includes completing CIA’s Plant-Powered Boot Camp and a Culinary Nutrition certification from the Culinary Nutrition Studio.

Before joining CIA’s faculty in 2022, she built extensive experience in clinical and outpatient nutrition. She served as an Outpatient Bariatric Dietitian with Touchpoint Support Services in Binghamton, NY, and as a Clinical Dietitian at Michigan Medicine in Ann Arbor, where she developed individualized dietary strategies for patients with complex metabolic and chronic conditions. Her graduate and teaching assistant roles at Cornell further strengthened her academic grounding in nutrition research.

When she’s not in the kitchen or classroom, she enjoys gardening a variety of vegetables and herbs, creating bubbly fermentations in her kitchen, and exploring the history and nature of the Hudson Valley with her husband and daughter.
